Onion Risotto

Ingredients

  • 1 Tbs butter
  • 1 1/4 cup rice
  • 1 pkt French Onion Soup
  • 2 1/2 cups warm water
  • 1 tsp mixed dried herbs
  • 100g mushrooms
  • 1-2 Tbs parsley

Instructions

Heat butter in a medium saucepan. Add rice. Cook over a low heat, stirring, for 2-3 mins. Combine soup mix and water. Stir into the rice. Add mixed herbs and mushrooms. Bring to the boil, then cover and cook over very low heat for 15-20 mins. or until rice is tender. Stir in parsley. Serve with meat and fish dishes.
