Mock Chocolate Tapioca Mousse

Ingredients

  • 1 1/4 cup skim milk
  • 1/3 cup Regular, Quick or Instant Cream of Wheat Cereal
  • 1/3 cup sugar
  • 1/2 cup semisweet chocolate chips
  • 2 ounces light cream cheese
  • 1 tsp vanilla extract
  • 2 1/2 cups prepared whipped topping
  • Chocolate shavings, for garnish

Instructions

In medium saucepan, over medium heat, heat milk to a boil . Slowly sprinkle in cereal. Cook and stir until thickened, about 2 minutes. Remove from heat; stir in sugar. In food processor or electric blender container, blend cereal mixture, chips, cream cheese and vanilla until well combined; pour into large bowl and let stand 5 minutes. Fold in 2 cups whipped topping. Cover; chill at least 2 hours. Serve topped with whipped topping and chocolate shavings if desired.
