Pressure Cooker Breakfast Hash

  • 6 eggs beaten
  • 1 c grated cheese
  • 1 c crumbled bacon, crumbled sausage or chopped ham
  • 6 small potatoes shredded


Coat pressure cooker in oil and preheat without cover. Meanwhile shred potatoes in processor, rinse and squeeze all moisture out, let brown in cooker while making other preperations. Beat eggs, set aside. Break up potatoes and add 1/4 c water, then rest of ingredients. Combine lightly. Cover and just bring to pressure. Serve immediately with toast. Makes 4-6 servings

Not sure I understand the cooking instructions so you bring the cooker to pressure and then immediately remove from heat and natural release? The shredded potatoes cook that quickly? Sounds like a great recipe for a weekend breakfast! (rating set to 1 because I haven't tried it yet, not because I didn't like it.)
