I love doing dishes like soups or stews in the pressure cooker, since it is so fast to cook! The flavors really meld together and it tastes like your food has been simmering all day long. The bacon adds a good richness to the soup. When I can find them, I use fresh clams for this since they pack a lot of flavor!

I just received an Instantpot pressure cooker for Christmas and I'm excited to try this recipe in it. Does anyone know if the 15 pounds of pressure in this recipe would be 'high pressure' on the Instantpot settings? Also, do you think frozen hash brown potatoes that are already cubed would be an acceptable substitute for the potatoes called for in the recipe?
