Filipino Peanut Stew

Ingredients

  • 2 pounds oxtails
  • beef tendons (optional)
  • beef feet (optional)
  • 1 pk Mama Sita's Kare-Kare Stew Base Mix
  • 1/2 pound string beans or green beans
  • 2 eggplants cut into pieces
  • 1 bunch baby bok choy
  • 3 garlic gloves
  • 1 onion cut into half
  • 1 tomato cut into half (optional)
  • 2 tb peanut butter

Instructions

Filipino Ox Tail Soup. Yield: 4 Servings. Wash the oxtail. Let it boil or use a pressure cooker, add the following when boiling the ox tail the garlic, tomatoes and the onion pour a little bit of salt. When oxtails are soft add the peanut butter and stir when peanut butter dissolved add the Mama Sitas Kare-Kare stew base mix by dissolving the mix with the oxtail broth. Let it boil and add the vegetables mentioned in the front ingredients. You can used fish sauce or the shrimp paste (anchovies) to taste.
