Mango Habanero Sauce

Ingredients

  • 6 whole mangos, peeled and seeded
  • 7 whole kiwifruit, peeled
  • 7 habanero chile peppers (fresh) stemed and seeded
  • juice of 4 whole limes
  • juice of 3 whole lemon
  • 4 tablespoons frozen orange juice concentrate
  • 1/3 cup vinegar
  • 1 teaspoon salt
  • 2 cups water

Instructions

In stock pot add Habaneros, water and salt. Slow boil for 15 minuets. then drain, saving 3/4 cup of water. Puree in blender the saved water and all ingredients except vinegar. Return to stock pot and simmer on medium low heat for 10 minutes, stirring constantly. Remove from heat and stir in vinegar till slightly cooled. Keeps in refrigerator 4 months or can and process. Refrigerate after opening.

Do you add the peppers to the puree after boiling or just the reserved water?

I pureed the habanero peppers with the rest of the ingredients (except vinegar) and the 3/4 cup saved water all together. I stirred in the vinegar at the end after cooking. It was delicious! I just had mango habenero sauce on some chicken wings recently from a pizza delivery restaurant, and I've been wanting to make my own sauce! It would be good on ribs, to, or just glazing oven roasted chicken breasts.
