Pickled Herring

Ingredients

  • 4 herring fillets
  • 2 medium onions, sliced
  • 1 bay Leaf
  • 1 Tbsp. vegetable oil
  • 1 teaspoon sugar
  • 1/2 to 3/4 cup vinegar
  • 1 cup cold water

Instructions

Soak herring for 3 or 4 hours in enough cold water to cover all fillets. Wash in cold water and cut into cubes. Prepare a marinade with the remaining ingredients and marinate for 2 days. Drain and serve.
