German Potato Salad Surprise

Of all of the wonderful recipes for potato salad there are out there in the cooking universe, some of the best ones come from Germany. With recipes dating back for generations, German potato salad dishes have a heartiness and rich flavor that set them apart from other deli salads you may have sampled in the past. This recipe for German Potato Salad Surprise has a special secret ingredient that makes it even more flavorful than other traditional German potato salad recipes. The addition of sour cream makes this side dish creamy and delicious, not to mention incredibly addictive!

Ingredients

  • 6 medium potatoes, boiled in skins
  • 1/4 cup white wine vinegar
  • 2 teaspoons sugar
  • 1 teaspoon salt
  • 1/4 teaspoon fresh ground black pepper
  • 1/4 teaspoon dry mustard powder
  • 1 pint sour cream
  • 1 cup cucumber, peeled and thinly sliced
  • Hungarian paprika, to taste

Instructions

  1. Peel and slice the potatoes while still warm and place them in a mixing bowl.
     
  2. Combine the vinegar, sugar, salt, mustard and pepper and mix well.
     
  3. Add the sour cream and cucumber and mix again.
     
  4. Pour the mixture over the potatoes and toss gently but well.
     
  5. Place in a serving dish and sprinkle with the paprika to taste.

This salad looks lovely. It is certainly a surprise to see that it contains cucumber. Something which I am only too happy about as I love cucumber. I think the Hungarian paprika will add a nice flavor too. Potatoes are such a good comfort food. They are also very filling and always better to eat them this way rather than fried!
