French Deli Potato Salad

The dressing for this potato salad recipe is made with an elegant white wine, mayonnaise, a wine vinaigrette and your favorite olive oil. Mixed with fresh parley and chopped almonds, it's nutty flavor will impress any potato salad connoisseur. Enjoy French Deli Potato Salad at your picnic.


  • 8 to 10 potatoes
  • 1 1/2 cup white wine
  • 1/2 cup carrot, grated
  • 1/2 cup onion, grated
  • 1/2 cup to 3/4 cup olive oil
  • 3 tablespoons wine vinegar
  • salt and pepper, to taste
  • 4 tablespoons mayonnaise
  • 3 hard boiled eggs
  • chopped almonds, to taste
  • parsley, freshly chopped, to taste


  1. Cook potatoes in skins until fork tender. When warm enough to handle, peel. break up with a fork into pieces.
  2. Pour on the wine and let sit until cool.
  3. Mix in the onion, and carrot. Add the olive oil, vinegar, salt and pepper, chopped egg. Chill very well.
  4. Stir in the mayo. Mound into a bowl and sprinkle with chopped parsley and almonds.
