This great recipe for Stuffed Pork Chops for Two makes a perfect meal for when there is just two of you around for dinner. These perfect portions of tender and juicy pork chops are complemented by spinach, onions and sun dried tomatoes. The nutty flavor of the Parmesan cheese really puts the final touch on this great dish. Serve with rice or a salad and your meal for two will certainly be a hit with the lucky person who gets to share it with you.

Ingredients

  • 2 3/4 inch thick pork chops, bone in or not
  • 1 cup frozen spinach, drained and chopped
  • 4 tablespoons diced onion
  • 1 teaspoon garlic, diced
  • 2 tablespoons sun dried tomatoes, diced
  • 1/3 cup Parmesan cheese, grated
  • salt and pepper

Instructions

  1. Preheat oven to 350 degrees F.

  2. If desired, trim excess fat from chops, and with a sharp knife carefully make a long slit into pork towards the bone. Season both sides with salt and pepper.

  3. Mix remaining ingredients in a bowl and stuff chops. Pinch to seal and hold together with toothpicks. Any leftover stuffing can be placed on top of chops when they're finishing in the oven.

  4. In a skillet, brown chops on medium high heat to sear, about 5 minutes on each side, then finish by putting skillet in oven for 20 - 30 minutes, depending on size and thickness of chops.

  5. Meat thermometer should read 145-150. Let rest 5-10 minutes, before serving.
