Impossible Rhubarb Streusel Pie

Ingredients

  • 2 tablespoons butter, firm
  • 1 cup Bisquick
  • 1/4 cup brown sugar, packed
  • 1/4 cup nuts, chopped
  • 16 ounces frozen rhubarb, thawed and drained
  • 3/4 cup milk
  • 2 eggs
  • 1 cup sugar
  • 2 tablespoons butter, softened
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Heat oven to 375 degrees F. Grease a 9" pie plate.
     
  2. Prepare streusel topping by combining firm butter, 1/2 cup Bisquick, brown sugar and nuts, reserve.
     
  3. Arrange rhubarb evenly in plate. Beat milk, eggs, sugar, 1/2 cup Bisquick, softened butter, cinnamon and nutmeg until smooth in food processor.
     
  4. Pour into plate. Sprinkle evenly with streusel topping.
     
  5. Bake until knife inserted in center comes out clean, about 40 minutes. Serve with sweetened whipped cream if desired.
