Delicious Lemon Meringue Pie

Ingredients

  • 8 ounces (225 grams) flour
  • 4 ounces (125 grams) butter
  • 2 ounces (50 grams) icing sugar
  • 1 egg
  • 2 to 3 teaspoons cold water
  • 2 ounces ( 50 grams) cornflour
  • 5 ounces (150 grams) sugar
  • 2 lemons
  • 3 teaspoons water
  • 3 egg yolks
  • 3 egg whites
  • 3 ounces (75 grams) sugar
  • 3 ounces (75 grams) icing sugar

Instructions

  1. Preheat the oven to 392 degrees F.
     
  2. Sieve the flour and a pinch of salt into a bowl (this traps air in the flour), cut the butter into blocks and put it into the flour, use two knives to cut the mixture again and again and then rub it between the fingers until it looks like breadcrumbs.
     
  3. Work fast so that the mixture stays cool, it's a good idea to make pastry early before the kitchen warms up, of course you can use a mixer instead.
     
  4. Add the sugar and make a hole in the middle of the mixture, add the egg and the water, using a fork mix all the ingredients together to obtain a stiff dough.
     
  5. Flour a marble surface and knead the dough on it until it is supple.
     
  6. Wrap the dough in plastic film and put it in the fridge for at least half an hour.
     
  7.  Roll out the dough and line a 20 cm flan case with it.
     
  8. Bake it blind (put a baking paper circle in it to cover the base, you can also put some dry beans into it to shape the bottom) in a preheated 392 degree F oven until golden, about 20 minutes.
     
  9. Turn the oven down to 347 degrees F.
     
  10. Use a fine grater to collect the zest (the yellow part ) of the lemon skin.
     
  11. Put the cornflour, sugar and lemon peel into a saucepan over a medium heat, add the water and lemon juice a little at a time while mixing vigorously all the time (I used a whisk) to obtain a smooth paste, bring the mixture to the boil and let it simmer for one minute.
     
  12. Remove the pan from the heat and add the yolks of three eggs and mix thoroughly, the residual heat in the mixture cooks the eggs.
     
  13. Fill the tart with the mixture.
     
  14. Whisk the egg whites until they are stiff and dry, add the sugar and then the icing sugar while continuing to whisk.
     
  15. Spread the meringue over the pie and bake in a 347 degree F oven for maximum of 30 minutes until it turns a golden brown.

I made this for dessert for Christmas dinner. My husband enjoys lemon meringue pie for Christmas. I lost my recipe, so I decided to try this one. It worked like a charm and was absolutely delicious. This reminded me of the one my mom used to make. My husband was happy, and I was happy that this recipe was so easy to follow. I did have to use 3 lemons instead of 2, because they weren't that juicy. Other than that, I did everything according to the recipe.

My husband love lemon meringue pie! I have always thought it was a lot of trouble to make. While, this recipe has quite a few steps I think it will be a piece of cake to make. As soon as I am done here I am going to get started on making it!

Very nice but am not familiar with the ingredients code. Most of the time it is in English weights or comments. I guess I will have to find a book with the "gm" explanations. I guess a nurse or doctor could dephier it but I can't. So I will get another recipe for Lemon Pie. Ladynell
