Easy Classic Ravioli

Homemade pasta recipes don't have to be difficult! This Easy Classic Ravioli dish is delicious, simple and makes the perfect Italian dinner. Pair this up with some chicken or Italian sausage.

  • Chicken stock
  • 1 pound pre-cooked medium cheese ravioli
  • 2 tablespoons olive oil
  • 2 teaspoons fresh garlic, chopped
  • 2 or 3 Roma tomatoes, sliced
  • 1/2 cup white wine
  • 1/2 cup chicken stock
  • 2 tablespoons fresh grated Parmesan or Romano cheese
  • 1/2 teaspoon fresh chopped sweet Basil
  • salt and pepper to taste
  1. In a large skillet or saute pan add olive oil and let it get good and hot.
  2. Add Garlic and turn down heat as not to burn it.
  3. Add pre-cooked ravioli tossing lightly being sure not to let stick to pan. Add sliced roma tomatoes tossing the same.
  4. When the ravioli and tomatoes are good and hot, add the white wine and deglaze the pan.
  5. Once the alchohol is cooked out, add the chicken stock and simmer for two to three minutes just enough to reduce it to a nice sauce.
  6. Add the fresh basil, then salt and pepper to taste. Serve with fresh grated Parmesan or Romano cheese.

This is a really good and basic ravioli dish using pre-made ravioli when you don't feel like trying to make ravioli from scratch. It can be a bit time-consuming, and there are a lot of good store-bought ones available nowadays. I like the suggestion of adding some Italian sausage to the dish, since I'm not overly fond of plain cheese ravioli unless it has a fairly unusual combination of cheeses in it.
