Buttermilk Pancakes

Buttermilk Pancakes


  • 1 1/3 c buttermilk
  • 1 egg
  • 1 1/2 c flour
  • 2 T sugar
  • 1 t baking powder
  • 3/4 t baking soda
  • 1/2 t salt
  • 1/4 c melted butter


Combine egg and buttermilk in a small bowl. In larger bowl mix all dry ingredients. Stir in buttermilk mixture gently, just until barely combined. Lumps are okay. Fold in butter. Lightly oil hot skillet. Pour 1/4 cup batter on hot surface. Turn when bubbles appear on surface. Cook other side 2 more minutes.
