Lemon Muffins

Ingredients

  • 2 cups flour
  • 1 cup sour cream
  • 3 tsps baking powder
  • 1/4 cup lemon juice
  • 1/2 cup brown sugar
  • 50g butter
  • 1 Tbsp grated lemon rind
  • 2 Tbsp raw sugar
  • 2 eggs
  • 1/2 cup milk

Instructions

Sift flour and baking powder into a large bowl. Stir in sugar and lemon rind. Beat eggs, sour cream and lemon juice together. Melt butter. Stir egg mixture in butter into dry ingredients with milk until just combined. Three-quarter fill greased muffin pans with mixture. Sprinkle muffins with raw sugar. Bake at 200 C for 15 minutes. Serve warm with Lemon Marmalade.
