Emu Stir Fry

Ingredients

  • 1 to 1 1/2 pounds emu, cut in 1-by- 1/8-inch strips
  • Garlic powder to taste
  • 1 cup white grape juice
  • 2 tablespoons soy sauce
  • 1/2 green bell pepper
  • 1/2 white onion
  • 4 cups hot cooked rice

Instructions

After cutting emu meat into strips, sprinkle with garlic powder and toss. Repeat sprinkle of garlic and toss emu meat again. Mix grape juice and soy sauce, then add emu meat to mixture. Marinate at least 2 hours. While emu meat is marinating, remove seeds from bell pepper and slice lengthwise into 1/8-inch-thick strips and set aside. Peel onion and slice into lengthwise wedges 1/8 inch thick. Set onion and peppers aside. Add cooking oil to fry pan or wok, heating to 350 degrees. Drain marinade from meat and saute 6 to 7 minutes, stirring frequently. If possible, stir-fry vegetables in another skillet at same time. After meat and vegetables are cooked, toss them together and place in a serving dish. Serve with rice.
