- 1 calf brain
- 1 Tbsp. vinegar
- 2 eggs
- matzo meal or ground cracker meal
- salt and pepper
Soak them in salted water with 1 Tbsp. vinegar for about an hour. Rinse off well, and remove any membranes. Mash, completely, and depending on how much you are using, add a couple of eggs, matzo meal or ground cracker meal, salt and pepper and fry like pancakes.
