Microwave Peanut coconut Brittle


  • 1 1/2 cup sugar
  • 1/2 cup light corn syrup
  • 1/2 cup water
  • dash of salt
  • 1 1/2 cup peanuts
  • 1/2 cup flaked coconut
  • 1 tablespoon butter or margarine
  • 1 teaspoon soda
  • 1 teaspoon vanilla


Combine sugar, corn syrup, water and salt in 2 quart Pyrex or corning container. Mix well. Microwave on high, uncovered, for 5 minutes. Stir well and insert microwave candy thermometer (don't use regular thermometer) into syrup. Then microwave on high 13 to 15 minutes until thermometer registers 300 degrees. Stir in peanuts and coconuts. Microwave on high 1 to 1/2 minutes or until heated. Quickly mix in butter, soda and vanilla; stir just until light and bubbly. Pour onto butter cookie sheet. Spread to desired thickness. Cool and break into pieces. Store in covered container.
