Tres Leches Cake

Ingredients

  • For the Cake:
  • 6 eggs, separated
  • 2 cups sugar
  • 2 cups flour
  • 3 teaspoons baking powder
  • 1/2 cup milk
  • 2 teaspoons vanilla
  • For Tres Leches sauce:
  • 1 can (13 oz.) evaporated milk
  • 1 can (14 oz.) sweetened condensed milk
  • 1 can (225 grams) Crema Media (light cream)
  • For Frosting:
  • 2 egg whites
  • Dash of salt
  • 2 tablespoons light corn syrup
  • 1 1/2 cup sugar
  • 1/3 cup water

Instructions

For Cake:

  1. Preheat oven to 350 degrees F.
     
  2. Beat egg whites until peaks form. Add sugar gradually.
     
  3. Add egg yolks, and beat 3 minutes.
     
  4. Combine flour and baking powder; add to egg mixture alternately with milk.
     
  5. Pour batter into well greased 9 x 13-inch pan.
  6. Bake at 350 degrees F for 30 to 40 minutes.

For Sauce:

  1. Pour evaporated milk, sweetened condensed milk, and crema media into blender; blend.
     
  2. Punch holes in cake with toothpick while still warm, and pour sauce over cake.
     
  3. Allow cake to cool in refrigerator before frosting.

For Frosting:

  1. Mix egg whites, salt, corn syrup, sugar, water, and vanilla in the top of double boiler.
     
  2. Cook for 7 to 10 minutes while beating constantly.
     
  3. Frost cake.
     
  4. Keep refrigerated.
