Refried Beans

Ingredients

  • water to cover beans
  • 1 pound dry pinto beans
  • 1 medium onion chopped
  • 4 T. margarine
  • 1 1/2 t. salt
  • pepper to taste
  • 1 block shredded Monterey Jack Cheese with peppers

Instructions

Cover and heat water, beans and onion to boiling; boil 2 minutes. Remove from heat; let stand 1 hour. Add just enough water to cover beans. Heat to boiling; reduce heat. Cover and boil gently, stirring occasionally, until beans are very tender, about 1 1/2 hours. ( Add water during cooking if necessary). Mash beans. Stir in margarine, salt and pepper until margarine is melted. Stir in cheese.
