  • 1 large tomato, seeded, diced
  • lemon juice
  • 1/4 cup parsley leaves
  • 1 can (6-ounce) white tuna in water, drained and flaked
  • 1/4 cup Hellmann's light mayonnaise
  • 1/4 cup lemon juice
  • 1 tablespoon water
  • 1 teaspoon anchovy paste
  • 2 drained capers

  2. Place in single layer, meaty side up, in 12-inch saute pan.

  3. Add broth and bring to boil.

  4. Simmer, covered, until chicken is just cooked through, 16 to 18 minutes.

  5. Remove from heat.

  6. When chicken is cool enough to handle, remove skin and bones.

  7. Trim gristle and fat.

  9. Strain broth into 2-quart bowl.

  10. Put chicken in broth.

  11. Refrigerate at least 3 hours or overnight.

  12. To prepare dressing, combine parsley, tuna, mayonnaise, lemon juice, water and anchovy paste in blender.

  13. Mix until very smooth and flowing.

  14. Stir in capers and chives.

  15. Adjust seasonings to taste.

  16. Drain chicken, reserving broth for another purpose, and pat lightly with paper towels.

  17. Combine chicken, celery and tomato in 2-quart bowl.

  18. Gently toss until well mixed.

  19. Toss salad with dressing.

  20. Season to taste with salt and lemon juice.

  21. Keep salad chilled until serving time.

  22. Before serving, drain off any liquid that accumulates in bottom of bowl.

  23. Stir well.

  24. Adjust seasonings to taste.

Ingredients list includes "2 drained capers" and "2 snipped chives." That CAN'T be right. So what is really meant here: two teaspoons (of each) or two tablespoons? Thanks in advance for the update because I'd like to try this soon! :)
