Smoked Tuna

Ingredients

  • 3/8 cup salt
  • 1 1/8 cup sugar
  • 1 tsp pepper
  • 1/4 tsp granulated garlic
  • 1/4 tsp granulated onion
  • 1/2 tsp Prague powder #1
  • 1 cup honey
  • 4 1-inch tuna steaks

Instructions

Mix the above ingredients until all dissolved, in about 1 gallon of water. Place the tuna steaks into it, making sure they are well covered. Let soak overnight in the refrigerator. Set the smoker to 140 degrees with the vents full open. After letting the tuna dry on the racks for about an hour, place them in the smoker and allowed to sit at 140 degrees for one hour, then close the dampers and add alder wood chips, and smoke at 140 degrees for 7 hours.
