Fruit Skewers

These fruit skewers are an amazing and simple watermelon recipe with other fruits. Enjoy a number of delicious and exotic fruits in this clever dish.

Ingredients

  • Simple syrup
  • Kumquats
  • Fresh mint
  • Lemon
  • 1 Round seeless watermelon, balled
  • 1 Honeydew balled
  • 1 Canteloupe or papaya, balled
  • Raspberries or blueberries

Instructions

  1. Make three syrups: kumquat, mint and lemon.
     
  2. For simple syrup, combine equal parts whie cane sugar (3/4 cup) to water (3/4 cup).
     
  3. Boil, stirring occasionally. Add flavoring while boiling.
     
  4. Simmer, not stirring, until reduced by almost half. Cool.
     
  5. Drizzle syrup over fruit and let steep overnight: canteloupe in kumquat, honeydew in mint and watermelon in lemon.
     
  6. Thread fruit balls onto wooden skewers separating each ball with a raspberry or a blueberry.

Grilled fruit is great, but this recipe should include pineapple! Pineapple is so delicious grilled. It sort of caramelizes it and brings out more flavor and sweetness with savor undertones. Grilling takes out the bitter bite of the kumquats, too. Kumquats are in season in winter, so for those year round grillers, try this in winter!
