Wine-Poached Pear Tart

This elegant Wine-poached Pear Tart rises above the ranks of traditional fruit pie recipes with the subtle flavors of white wine, almond, and nutmeg.

Ingredients

  • 1 1/3 cup flour
  • 3/4 cup plus 3 tablespoons granulated sugar
  • 1/4 teaspoon salt
  • 12 tablespoons butter (1 1/2 sticks)
  • 1 egg yolk
  • 1 bottle (3 1/2 cups) white wine
  • zest from 1/2 lemon
  • 8 firm pears
  • 1/2 teaspoon almond extract
  • 1/2 teaspoon nutmeg

Instructions

  1. Preheat oven to 375 degrees F.
     
  2. Combine flour, 2 tablespoons sugar, and salt. Cut in 10 tablespoons butter.
     
  3. Mix egg yolk with 1 tablespoon cold water and mix with flour mixture.
     
  4. Gather dough into a ball. Roll out the dough, and fit it into a 10-inch tart pan.
     
  5. Bake the crust at 375 degrees F for 40 minutes.
     
  6. Combine wine, 3/4 cup sugar, and zest, and bring the mixture to a boil.
     
  7. Peel, halve, and core the pears. Add them to the pot, cover, and simmer for 20 minutes.
     
  8. Remove 6 pear halves and continue cooking remaining pears 15 minutes.
     
  9. Remove remaining pears and process them with almond extract and nutmeg.
     
  10. Spread puree in tart shell. Slice reserved pears and arrange on top.
     
  11. Sprinkle with 1 tablespoon sugar and broil until lightly browned.
