Ingredients

  • 1 1/2 cup salted butter softened
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 3 1/2 cups flour
  • 1 teaspoon baking powder
  • 2 (6-ounce) package strawberry Jell-O
  • Rainbow sprinkles

Instructions

  1. Preheat oven to 350 degrees F. 

  2. Beat butter in large bowl with mixer until creamy. Add sugar and beat until light and fluffy. Blend in egg and vanilla. 

  3. Mix flour and baking powder in a separate bowl. Gradually beat in flour mixture. 

  4. Add Jell-O. Knead together with dough. 

  5. Shape dough into 1-inch balls. Roll in sprinkles. 

  6. Place, 2 inches apart, on parchment-lined baking sheets. 

  7. Bake 8 to 10 minutes on lined baking sheets.

  8. Cool and enjoy!

What a fun recipe this will be to make and I just love that because of the many flavors of jello available you can alternate them according to the occasion or mood. Since I prefer things a little less sweetened than most I think it would probably be safe to eliminate the sugar altogether being that the jello is already sweetened. Do you think it'll still come out the same, just not as sweet or do I need to add the sugar to get the right texture?

My niece and nephews LOVE making these! But then again, what kid wouldn't love these bright snacks! They are just so colourful and cheerful. Depending on the flavour of Jello you use, you can completely change the colour and flavour of the cookies. The possibilities are endless with this recipe. If you are looking for something fun to do with the kids on a rainy day, give this recipe a whirl!

If you use splenda and sugar-free jello, do these turn out?

These were very sweet.I think that I may have to eliminate the sugar added in the mix and only roll in sugar. Jello has sugar already in it.

Will try recipe with both regular Jello and sugar free. Sounds like lots of fun for the grandkids! Also, one of your readers said she has dusted wet grapes with dry Jello - going to try that, too. Thanks, ladies!

The grapes idea sounds good, after dusting with jello, try freezing the grapes. Will try these cookie with sugar free jello too.
