Salmon with Lime and Dill

Ingredients

  • 1 pound salmon fillet
  • 1 heaping teaspoon of dried dill leaves or 4 good sprigs of fresh dill
  • 1 medium lime
  • 2 tablespoons of butter
  • 1/4 teaspoon of salt and fresh black pepper

Instructions

Preheat oven to 350 degrees Place salmon in a foil lined baking dish. Sprinkle the dill evenly over the salmon. Squeeze the juice of 1/2 of the lime over the fillet. Evenly sprinkle the salt and pepper over the salmon. Place 1 tablespoon of butter over the fillet, and cover tightly with foil. Bake for 20-25 minutes depending on the thickness of the fillet. Remove from oven and squeeze remaining lime juice over salmon and sprinkle the last 1 tablespoon of butter into the juices in the pan.
