Bluefish Cakes

Ingredients

  • 1 pound poached bluefish fillets, skinned
  • 1/2 t seafood seasoning
  • 2 T minced onions
  • 1 T minced green pepper
  • 2 eggs beaten
  • 1/2 c finely crushed cracker crumbs
  • 4 T mayonnaise
  • 2 t Dijon mustard
  • salt and pepper to taste

Instructions

Yield: 4 -6 serving. Flake bluefish, then mix all ingredients together, form into cakes. Fry at 350 degrees F. until light brown. To insure against any fatty flavor, after poaching the bluefish, remove the darker flesh in the center of the outside of the filet.

This sounds like it would be delicious but I have to say...out of all the many types of fish I've eaten, I don't remember ever hearing of bluefish. Is it a rare fish? This is probably a strange question but I've never poached fish before. When referring to poaching the fish, are you talking about soaking it in a marinade...or do you poach it in the water like you would eggs?
