Fabulous Egg Salad

Create a fabulous egg salad recipe this summer, it's great for picnics.

  • 8 firm tofu
  • 2 tablespoons minced celery
  • 1 tablespoon minced green onion
  • 1/2 tumeric
  • 1/4 (each) curry powder, ground cumin, ground coriander
  • 2 nutritional yeast
  • 1/2 salt, seasoned salt (msg free) or kelp powder
  • 2 tablespoons -3 mayonnaise or vegan mayo
  • freshly ground pepper to taste

1. Crumble the tofu into a medium bowl, ad the celery and green onion.

2. Next add, tumeric, curry, cumin, coriander, yeast and salt(or kelp), and mayo.

3. Mix well with a fork, mashing any large chunks of tofu.

4. Add pepper to taste.

the instructions need to be reviewed, you are missing measurments on the spices and yeast. i did make it though, and with my guessing, it came out tasting exactly like egg salad. delicious. i substituted caraway seed for coriander and onion for the scallion. it was perfection.

I love caraway seed! I think that's a good addition to this recipe! Thanks! I always chop up my egg whites separately from the yolk because I like a chunkier egg salad in a sandwich and when I keep both together, the yolk gets too smooth.
