These baked eggs recipes bring a little something extra to the breakfast table

These recipes for Baked Eggs 2 Ways will breathe some life back into your tired morning breakfast routine. Made with delicious flavors from salsa, cheeses, heavy cream and of course eggs, this easy egg recipe is simply divine. One way is a more Italian-inspired recipe that turns out tasting similarly to a pizza with tomato sauce and Mozzarella. The other takes a Mexican approach and uses salsa and a three cheese blend. No matter which appeals more to you, both of these recipes could not be simpler to make from start to finish. Plus, since these eggs are baked instead of fried, they are even healthier for you, which only adds to the overall awesomeness of these recipes!

  • Italian Baked Eggs
  • 1/2 cup marinara sauce
  • 2 large eggs, room temperature
  • 3 tablespoons heavy cream
  • 1/8 cup shredded Mozzarella cheese
  • 2 tablespoons grated Parmesan
  • salt and pepper, to taste
  • 2 tablespoons basil leaves, chopped
  • Mexican Baked Eggs
  • 1/2 cup salsa
  • 2 large eggs, room temperature
  • 3 tablespoons heavy cream
  • 1/8 cup shredded Mozzarella cheese
  • 1/8 cup shredded Mexican blend cheese
  • salt and pepper, to taste
  • 1 green onion, chopped


  1. Preheat oven to 425 degrees. Lightly spray 2 oven safe bowls with nonstick spray.

  2. Pour sauce (or salsa) in the bottom of each bowl. Top with 2 eggs, heavy cream and respective cheeses. Season with salt and pepper.

  3. Place into the oven until egg whites are cooked through, about 10 minutes. Yolks will still be slightly over easy.  Leave in the oven longer for harder cooked yolks.

  4. Serve immediately, garnish with basil (Italian) or green onions (Mexican).

While surfing on these recipe pages, I am learning a lot about cooking. I do not think that I have ever heard of baking an egg as a meal in itself. This is interesting and both of these recipes sound worth trying out. Thanks for the inspirations.

If I take the jump and prepare either of the two of these baked egg recipes, it will be the first time I have ever prepared an egg by baking it. I like the idea. You can make the dish, walk away and come back to a breakfast instead of having to hover over a fried egg. Both of them sound delicious.

I love salsa with eggs especially a veggie omelet. I going to add try this recipe but will add the salsa after the dish has been cooked. I prefer cook salsa.

The recipe for Baked eggs two ways sounds like this could be a recipe to make a lot. The Italian baked eggs sounds absolutely delicious. I am going to try them this weekend for my family. The Mexican one sounds good too. They are both worth trying. I am looking forward to making both of them.

Hmm I wonder if I'd be able to substitute the heavy cream for whole milk. Has anyone tried this?

These are called small oval bakers -- they are individual serving dishes. Dimensions will vary, but if you look up "small oval bakers" on Google, you'll be able to find a retailer that carries them. Hope that helps!
