This has to be the cheesiest version of macaroni and cheese I've ever encountered. When I first looked at the title, I wondered which six cheeses would be used in the recipe. I figured that cheddar was a given, but the other cheeses were a pleasant surprise. I had wondered if a bit of bleu cheese might be involved since I've encountered that before in some offbeat mac-and-cheese recipes. I'm definitely going to have to give this one a try in the near future.

There is so much real cheese in this version of this dish that it should be called cheese and macaroni! This might not be the healthiest version that I have seen - or even close, but it surely will make anyone that eats it very happy! I was glad to see a little bit of nutmeg in the mix, as I always add a little when I make creamy or cheesy pastas. I think it is an Italian thing.
