Ingredients

  • 1 (8-ounce) carton Cool Whip
  • 1 (3-ounce) box peach Jello
  • 1 cup cottage cheese
  • 1 cup pecans
  • 1 (20-ounce) can pineapple chunks in juice

Instructions

  1. Mix Cool Whip and dry Jello together.
     
  2. Add the cottage cheese and pecans and mix well. 
     
  3. Drain the pineapple chunks and add to the mixture.
     
  4. Chill for 1 hour.

Yummy! This looks like some type of ambrosia recipe which is always popular at summer picnics and potlucks! It's great because you can switch up the fruit and jello flavours to make different kinds. You could sprinkle coconut on top to make it like a pina colada dessert with pineapple! Yummy - nice and refreshing. A perfect summer dessert that satisfies the sweet tooth without being too heavy or filling!

Could I use crushed pineapple instead of the chunks?

I've made a variant of this salad for years. We use Lime gelatin, pineapple and any kind of cottage cheese. You can use any fruit and gelatin combo. Make sure the fruit is well drained if it's canned. It is the ONLY way I can eat cottage cheese!

YUM! SMALL OR LARGE CURD COTTAGE CHEESE?

Do I have to use cottage cheese or will it ruin the salad? Can other can fruit be added to the salad or will make to much of a drastic change?

Do I drain the pineapple? Is it a small or a large pkg. of jello?

See item 3 in the instructions....yes drain pineapple.
