Orange Snow

  • 1 envelope unflavored gelatin
  • 1/2 cup sugar
  • 1/2 cup milk
  • 2 egg yolks, beaten
  • 1/4 cup fresh lemon juice
  • 1/4 cup orange juice
  • 1/2 cup cottage cheese
  • 1/2 cup flaked coconut
  • 2 egg whites
  • 1 cup whipping cream
  • 1 can (11 oz.) Mandarin oranges, drained (reserve juice for glaze)
  • Orange Glaze (below)

Mix gelatin and sugar. Blend in milk and egg yolks. Cook over low heat until dissolved and mixture begins to bubble. Remove from heat. Add lemon juice, orange juice, cottage cheese and coconut. Chill in small mixer bowl in refrigerator until partially set, 45 min. to 1 hour. Beat egg whites until stiff, but not dry. Whip cream until stiff. Whip chilled mixture on medium speed with electric mixer; fold in egg whites and whipped crream. Spoon onto parfait or sherbet glasses, alternating with orange slices and Orange Glaze (below) reserving 1 orange slice and small amount of glaze for top of each. Chill until firm. 8 - 10 servings. ORANGE GLAZE Mix 1/3 cup sugar, 1 Tbsp. cornstarch and 1/8 tsp. salt. Slowly blend in 1/2 cup Mandarin orange juice and a few drops yellow food coloring. Bring to a boil, stirring constantly: boil 1 min. Cool.
