Keep the other sheet of pastry chilled in the fridge until the first sheet is sugared and in the oven.

These are the most delightfully delicious little sweet treats. They are so easy to make, and they keep so well, it's great to keep them on hand. I've added red sprinkles to the sugar on the inside and they come out looking like little Valentines. Love the convenience of using store bought puff pastry. Go ahead and impress your friends and family with these Crispy Palmiers.

I love how crispy and crumbly the cookies are, while still having a nice chew to them.(If they are considered a cookie or a pastry I'm just not sure) I use store bought puff pastry more and more nowadays, since it is so versatile, and it makes your cooking seem like you spent all day in the kitchen making the food, when you really didn't! I've made puff pastry from scratch before and it is extremely time consuming rolling out all the buttery layers, folding the dough, chilling, and repeating many, many times.
