Cookie Crusted Cheesecake Bars are quite possibly the easiest and most delicious morsels you'll ever make! If you love cheesecake and cookie dough, this is the recipe for you. This is a super easy dessert recipe that is perfect for an Easter potluck. This recipe only takes a quick half hour from start to finish, which those in a hurry will definitely appreciate. Grab an iced cold glass of milk or even a warm and comforting cup of coffee and one of these bars. It's the perfect companion. 


  • 1 (16-ounce) package refrigerated caramel pecan chocolate chip cookie dough
  • 2 packages cream cheese, softened
  • 1 teaspoon vanilla
  • 1/2 cup sugar
  • 2 eggs


  1. Preheat oven to 350 degrees F.

  2. Line an 8x8-inch baking pan with parchment paper, leaving overhang on all sides. Press half of the cookie dough evenly in bottom of a pan to form a crust.

  3. In a bowl, combine cream cheese, vanilla and sugar. Using a mixer at low speed, cream together until fluffy. Add in eggs, mixing until well combined.

  4. Carefully pour the cream cheese mixture over dough, spreading into an even layer. 

  5. Crumble remaining dough into small pieces and sprinkle over cream cheese mixture.

  6. Bake 25 to 30 minutes or until golden brown and firm to touch. Remove from oven and allow to cool for about 30 minutes.

This looks really good. The video shows nicely how incredibly simple this is to make. I know this would be an absolute hit if I were to bring a plate of these to any gathering. I'd like to give this a go with some other cookie dough flavors, since I think it would also be spectacular. I love versatile recipes like this.
