Chocolate Slice with Cherry Topping
- 175g butter
- 2 Tbs golden syrup
- 2 Tbs rum
- 2 Tbs cocoa
- 3 cups crumbled weetbix
- 1 cup icing sugar
- 1/2 cup white chocolate buttons
- 2 Tbs lemon juice
- 397g can sweetened condensed milk
- 2 Tbs hot water
- 1/2 cup chopped red glace cherries
In a large saucepan, melt butter, condensed milk and golden syrup together. Bring to the boil stirring all the time. Simmer 2 mins., add rum, crushed weetbix and cocoa. Combine all ingredients. Pour into a foil-lined 27 cm x 18 cm tin. Cool. Melt chocolate buttons, add icing sugar, lemon juice, hot water and cherries. Mix to a smooth paste. Pour over weetbix mixture. Refrigerate until set. Turn onto a board, remove foil and cut into slices. NOTE:- This is a rich slice. If preferred the rum can be replace with other flavours of your choice.
