I'm 58 and have never tried rhubarb! That's embarrassing! I plan to change that asap with this recipe, though! I like the idea of a little tartness in my desserts. Growing up, I had a tart cherry tree in my backyard and my mother used to make cherry pie from it. It's a lot different than the sweet cherry pies that are available in grocery stores. Now that I have something to make with rhubarb, I will be looking for it in the grocery store to see when it is in season. I wonder if there's frozen rhubarb?

The picture at the top of this section is misleading--it is not rhubarb, but, Swiss Chard.

May 17, 2010 by Chef 6378885br br Dear Stephaniebr br I do have a recipe for canning rhubarb. Wash and Cut into 1 inch without taking the skin off. Place in baking dish and add 1 cup of sugar to each quart of rhubard. Cover and dish and cook in the oven until tender. Pack the hot rhubard and syrup into hot jars. The syrup will come automatically when you cook the rhubard. Fill to within 12". Seal and process in water bath for 5 minutes. br br I use this canned recipe to make my pies or sauces for waffles and pancakes. Just add eggs and more sugar with flour for pies.br br

I am just wondering if any one can give me a good recipe to can rhubarb? I have a daughter in law in a different state who has never had rhubarb and I would love to be able to can some for pies or what ever during winter months plus send her some. Thank you Stephanie
