Unique "Loaded" Macaroni Salad

With hard-boiled eggs, pickles, black olives, onions and more thrown into the mix, you know you're in for a treat with this tasty recipe for macaroni salad. It's one of the best deli salads we've ever had and once you've had the pleasure of sampling this dish, we're sure you'll agree!

  • 8 ounces macaroni
  • 4 eggs, hard-boiled and chopped
  • 4 sweet pickles, chopped
  • 2 ounces pimento, diced
  • 6 ounces black olives, sliced
  • 1 medium onion, chopped
  • 3 tablespoons balsamic vinegar
  • 1 cup mayonnaise
  • 1 teaspoon seasoned salt
  • 1/2 teaspoon pepper
  • 1 tablespoon salad herbs
  • 1 tablespoon Dijon mustard
  • 1/4 teaspoon paprika


  1. Cook macaroni according to package instructions; drain, rinse in cold water.
  2. Place cooked macaroni in large bowl along with eggs, pickles, olives, pimentos and onion.
  3. In a small bowl, mix the vinegar, mayonnaise, salt, pepper, salad herbs, paprika and mustard.
  4. Pour dressing over macaroni mixture and mix thoroughly.
  5. Chill for at least an hour before serving.

My family will love this macaroni salad. It's a great mix of things I normally put in my macaroni, potato, and pasta salads. It's funny how you never think to mix it up and put new ingredients in your old standby salads. I will be making this next week to serve with grilled chicken and baked beans.
