Slow Cooker Colonial Autumn Stew

Brimming with beef and vegetables, this vintage recipe has been revamped to be made in a slow cooker. Slow Cooker Colonial Autumn Stew is an enticing stew made with squash, potatoes and onions. Hearty slow cooking recipes like this one can feed any appetite and will leave you feeling content and warm. Enjoy with your favorite bread or biscuits and make it for dinner tonight.

Serves: 8

  • 2 pounds chuck steak, cubed
  • 1/4 cup flour
  • 2 cups tomato juice
  • 1 cup beef broth
  • 1 tablespoon parlsey, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon salt
  • 1/4 teaspoon pepper
  • 4 potatoes, pared and sliced
  • 2 medium onions, peeled and quartered
  • 1 acorn squash, split and seed
  • 2 tablespoons margarine or butter
  1. Trim all excess fat from beef. Shake cubes, part at a time, with flour in a plastic bag to coat well.
  2. Combine parlsey, garlic, salt and pepper in a cup.
  3. Layer vegetables and meat into a slow cooker this way; Half of each of potatoes, onions and beef, sprinkling each layer lightly with seasoning mixture.
  4. Repeat with remaiing potatoes, onions, beef and seasonings.
  5. Cut each squash half into 6 slices; pare; arrange on top. Pour tomato juice and broth over ingredients; dot with butter or margarine, cover.
  6. Cook on low for 8 hours or on high for 4 hours, or until meat and vegetables are tender.
