One Pot Chicken Dinner

Make this One Pot Chicken Dinner entirely in your slow cooker. Simple slow cooker recipes like this are perfect for long nights at the office...simply toss in all your ingredients, set it to low, and have dinner ready by the time you get home!

Ingredients

  • 3 pounds chicken, cut into pieces
  • 2 tablespoons unsalted butter, softened
  • 2 tablespoons olive oil
  • 2 cups chicken broth
  • 2 cups carrots, diced
  • 1 medium onion, halved and slivered
  • 2 tablespoons garlic, minced
  • 1 tablespoon fresh tarragon, chopped
  • salt and pepper to taste
  • 2 tablespoons cornstarch
  • 2 tablespoons fresh tarragon or parsley, for garnish

Instructions

  1. Rinse chicken pieces and pat dry. Place in slow cooker, along with the butter, olive oil, chicken broth, carrots, onion, garlic, tarragon, salt, and pepper.  Stir to combine.  Cover and cook on high heat for 4 1/2 hours, or until cooked through.
     
  2. Remove chicken pieces from the slow cooker and keep warm. Mix the cornstarch with 2 tablespoons cold water in a small bowl. Whisk into the sauce in the pot and continue cooking, covered, 30 minutes or until the sauce is thickened slightly.
     
  3. Serve the chicken topped with the sauce and sprinkled with tarragon or parsley.

If this is supposed to be a recipe that is perfect for those long nights at the office, why do the directions call for it to cook for only 4 1/2 hours and then still require another 30 minutes of preparation when you get home. Might be a great tasting recipe, but not really a time saver for a busy mom.
