Plump Pumpkin Cookies

Ingredients

  • 1/2 cup shortening
  • 1 cup brown sugar
  • 1 cup mashed pumpkin
  • 1 cup raisins
  • 1/2 cup nuts
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • icing sugar (optional)

Instructions

  1. Preheat oven to 350 degrees F.
     
  2. Cream shortening and sugar, then add pumpkin, raisins, nuts and vanilla and mix well.
     
  3. Sift together flour, baking soda, cinnamon and baking powder and add to creamed ingredients.
     
  4. Mix well, then drop ty teaspoonsful onto greased cookie sheet.
     
  5. Bake at 350 degree F for 8 to 10 minutes. When cool, dust with icing sugar if desired.
