Rich and creamy, these Caramel Macchiato Cookies are perfect for fans of this fabulous drink. If you aren't familliar with this famously sweet coffee drink, it's basically a caramel latte with a little bit extra espresso mixed in. Sound tasty? These cookies are basically a caramel macchiato in cookie form, and they are as delicious as they sound. The caramel and chocolate drizzle on the top makes these espresso cookies simply irresistible and gives them a rich and sugary finish.

From the Chef: Those specialty drinks at the local coffee shop are dangerously delicious. It's so easy to find an excuse to pop in before work or during a lunch break. Sometimes when I'm feeling the urge for a sweet coffee treat, I bake a batch of these cookies to keep near my desk, so I can munch on them all day long.

Ingredients

  • 2 teaspoons instant espresso powder
  • 1 tablespoon hot water
  • 1 (17.5-ounce) bag sugar cookie mix
  • 1/4 cup all-purpose flour
  • 1/2 cup unsalted butter, melted
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • 1 large egg
  • 1 (12.25-ounce) jar caramel sauce
  • 1 (11.75-ounce) jar hot fudge sauce

Instructions:

  1. Preheat the oven to 350°F. Coat two baking sheets with cooking spray. Set aside.

  2. In a small bowl, dissolve the espresso powder into the hot water.

  3. In a large bowl, combine the cookie mix and flour. Stir in the espresso mixture, butter, vanilla, salt, and egg until a soft dough forms.

  4. Roll the dough into 1 1/2-inch balls. Place on the baking sheets and bake for 8 to 10 minutes. Transfer to wire racks and cool completely. Lightly drizzle with caramel sauce and hot fudge. Place the cookies in the fridge for 5 to 10 minutes before serving to set the drizzle. Serve.

These look amazing and pretty easy to make, too. Very rich, though. Perfect with a glass of milk )

These look simply amazing and I'm sure they have a taste to boot. I normally enjoy having some cookies with a nice coffee, but this seems sort of redundant. Probably a nice tall glass of milk would work better. I'm definitely filing this one away for use when I'm baking cookies for Christmas. I think it would a great treat for a number of coffee drinking friends.
