Black Bean Chili with Pork

Tender pork and black beans hang out all day in your slow cooker to make this delicious black bean chili with pork. This slow cooker chili recipe is not only tasty, but colorful. Serve with sour cream and fresh cilantro for a striking meal.

Ingredients

  • 1 pound boneless pork, cut into 1/2-inch cubes
  • 2 cans (about 16 ounces) black beans, drained
  • 1 red or yellow bell pepper, chopped
  • 1 tomato, chopped
  • 1 red onion, thinly sliced
  • 1 clove garlic, crushed
  • 1/2 teaspoon ground cumin
  • 2 teaspoons chili powder
  • 1/2 teaspoon salt
  • 8 ounces can tomato sauce
  • 1/2 cup sour cream or plain yogurt
  • 2 tablespoons chopped cilantro

Instructions

  1. In a slow cooker, stir together pork, beans, bell pepper, tomato, onion, garlic, cumin, chili powder, salt, and tomato sauce. Cover and cook on low 8 to 9 hours.
     
  2. Spoon into individual bowls; top with sour cream and cilantro.
