Cooking Time30 min

Ingredients

  • 1/4 cup lime juice
  • 1/4 cup olive oil
  • 1 tablespoon minced garlic
  • 2 boneless, skinless chicken breasts
  • salt and pepper to taste

Instructions

  1. In a medium bowl, whisk together the lime juice, garlic, and olive oil. Season with salt and pepper generously, and add chicken, making sure it is well-coated with the marinade.
     
  2. Marinate chicken, covered in fridge for at least 3 hours and preferably overnight.
     
  3. Preheat oven to 400 degrees F.
     
  4. Remove chicken from marinade and discard marinade. Arrange chicken breasts in a shallow baking pan.
     
  5. Season with salt and pepper and bake for 25-30 minutes or until chicken is cooked through and the juices run clear when you prick it with a fork.

1 tablespoon minced garlic? Well, I am not sure if I could even taste "1 tablespoon minced garlic" in this dish. Oh, wait, it doesn't matter because they did not include the garlic! Me? I'd put the garlic in with the marinade; but a lot more of it. Or maybe a bunch of cloves of garlic stuffed into slits in the meat. Now THAT would be worthy of the name "Garlic Chicken".
