All In One Chicken

Ingredients

  • 4 medium potatoes
  • 1 pound carrots
  • 2 medium onions
  • 1 1/2 pound boneless skinless chicken breasts
  • 1 cup dry white wine, vermouth, beer or chicken stock
  • 2 bay leaf, broken in half
  • 2 pkg frozen green beans, 10 oz

Instructions

  1. Preheat oven to 350F.
     
  2. Wash the potatoes but do not peel. Cut in quarters.
     
  3. Wash carrots and cut into 2 inch chunks.
     
  4. Peel onion and cut into wedges.
     
  5. In an ungreased 8x12" or 9x13" baking dish, arrange the chicken, potatoes, carrots and onion.
     
  6. Pour the wine or other liquid over the chicken. Add the bay leaf. Cover baking dish with foil
     
  7. Bake the chicken for 1 hour. Uncover the chicken and add the frozen green beans.
     
  8. Continue baking for 10-15 minutes or until the chicken is thoroughly cooked and vegetables are tender.

I never thought of combining green beans and chicken unless they were separate parts of the dish. I like that this recipe calls for them both in the same one because it sounds like they will taste good together. I want to use the white wine because I think that will be what pairs the two together the best.

I used chicken broth. Basically a braised chicken type recipe. Easy to personalize to individual taste. This also made an attractive presentation if you are inclined to take that step. Good stuff! Thanks for the post.

With a 9x13 pan you should be able to use 2 packages of green beans 10 oz. Also depending how many chicken breast you use depends on how many it will feed! This is one of them recipes that you adjust to your families liking. Don't care to much for green beans but love carrots then add more carrots than green beans! You really don't need butter. I would put pepper on it. Chicken stock has lots of sodium so I would not put much salt if any on the chicken if you are watching your sodium intake.

um...RecipeLion??? There's NO butter listed on the ingredients list, or in the instructions, so HOW can we try it WITHOUT butter? Perhaps you need to recheck the recipe and correct any mistakes? Just a thought.

The way I figure it is, the person who submitted this recipe altered one that originally called for butter. That being said, I, too, would like to know how many people this will feed. With 2 pkgs of 10 oz frozen green beans, it must feed an ARMY. Can you even sprinkle that much (green beans) over all the other ingredients in the size baking dish recommended? Do you recover the dish after adding the beans, or do continue cooking uncovered? If anyone actually tries this recipe please let us know how it turns out. Thanks.

Why does every Recipe need butter? This recipe is perfect just the way it is and DOES NOT need any buttet

Now I'm confused. I have read all the comments and then the recipe several times, and I see no reference to butter anywhere except in the comments. Am I missing something?
