Potluck King Ranch Chicken

Everyone loves king ranch chicken because it's so flavorful and has great texture. Ingredients

  • 1 chicken, boiled
  • 1 package tortilla chips
  • 1/2 cup onion, chopped
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1/2 can Rotel tomatoes with peppers
  • 1/2 cup green pepper, chopped
  • 12 tortillas
  • 1 package grated Monterey Jack cheese
  • 1 cup chicken broth

Instructions

  1. Preheat oven to 300 degrees F.
     
  2. Boil chicken; remove meat from skin and bones.
     
  3. Saute onions and green pepper. Mix with soups, tomatoes (drained), cubed chicken, and chicken broth.
     
  4. Line bottom of Pyrex casserole dish with six tortillas.
     
  5. Add 1/2 of soup mixture; spread over tortillas. Sprinkle grated cheese over mixture.
     
  6. Make another layer of six tortillas, then add the chicken mixture, then more cheese.
     
  7. Cover with foil and bake for 1 hour until cheese is bubbly. Top with crushed tortilla chips.

Leaving the tortillas whole makes this hard to serve and eat. Cut/tear them into pieces before layering.
