Key Lime Cheesecake

Get the cool, refreshing summer taste of key lime with this cheesecake. If key limes are not in season or you are having trouble finding them at your grocery store, try asking for bottled key lime juice.

  • 1 1/4 cup Graham cracker crumbs
  • 1/4 cup butter or margarine, melted
  • 3 (8-ounce) packages softened cream cheese
  • 3 eggs
  • 3/4 cup + 5 tablespoons sugar
  • 1 teaspoon lime rind, granted
  • 1/4 cup key lime juice
  • 1 teaspoon vanilla extract
  • 2 cups sour cream
  • Lime slices (optional)
  • Strawberries (optional)
  1. Preheat oven to 350 degrees F.
  2. Combine crust ingredients and stir well. Press crumb mixture evenly over bottom and up sides of a 9-inch springform pan. Bake for 5 to 6 minutes. Let cool.
  3. Beat cream cheese until light and fluffy, gradually add 3/4 cup sugar, beating well. Add eggs, one at a time, beating well after each addition. Stir in lime rind, juice and vanilla. Pour mixture into prepared pan.
  4. Bake at 375 degrees F for 45 minutes, or until set.
  5. Combine sour cream and 3 tablespoons sugar, stir well and spread evenly over cheesecake. Bake at 500 degrees F for 5 minutes. Let cool to room temperature on a wire rack, chill at least 8 hours.
  6. To serve, carefully remove sides of springform pan. If desired, garnish with strawberries and lime slices.

Why does this show a green lime? Key limes are yellow and round. Persian limes are green.

Hello there! Thanks for your comments - we will make sure to update this recipe in an order that makes sense.

The 2 Tbsp sugar goes with the crust ingredients. 3/4 cup sugar goes with the cream cheese. The sour cream and 3 Tbsp go together. The order of the ingredients is a little wacky.

Mexrick, I think if you reread instructions you will find all ingredients included. Sugar in #4 of instruction list, and lime rind in #2 of instructions.

I need some help here. The ingredients list and the written directions don't equate! I checked off the list of ingredients with the directions and came up with 2 Tbs. of sugar and 1 Tbs. of grated lime rind that aren't included in the written instructions. I hate it when this happens!
