Ultimate Carrot Casserole

(0 Votes)

Ultimate Carrot Casserole is the perfect side dish for any dinner. This carrot horseradish casserole uses cream and breadcrumbs, so you get a casserole that is creamy and crunchy all at once! This is always a favorite at my family's holiday gatherings.

  • 2 pounds carrots
  • 1/2 cup reserved liquid
  • 1 tablespoon onion, grated
  • 1 1/2 teaspoon prepared horseradish
  • 1/2 cup cream, mayonnaise, or half-and-half
  • salt, to taste
  • pepper, to taste
  • buttered bread or cracker crumbs, to taste
  1. Pre-heat oven to 375 degrees F.
  2. Cut carrots into bite-sized slices or slivers. Simmer in just enough water to cover. Drain, saving the liquid.
  3. To 1/2 cup reserved liquid, add grated onion; prepared horseradish; and your choice of 1/2 cup cream, mayonnaise, or half-and-half. Season with salt and pepper.
  4. Pour mixture over carrots in an oven-proof casserole. Top with your favorite buttered bread or cracker crumbs.
  5. Bake until heated through and crumbs are lightly browned.
