Texas Meat Skillet

This Texas meat skillet packs all the flavors of Tex Mex cooking into a one pot dinner. This easy to make ground beef skillet is best served with tortilla chips or corn chips and is great for campfire parties!

Ingredients

  • 2 cups ground beef
  • 1/2 cup water
  • 1 can (about 14.5 ounces) crushed tomatoes
  • 1 can (about 15.5 ounces) dark red kidney beans, undrained
  • 1 cup long-grain rice, cooked
  • 1/2 cup bell peppers, chopped
  • 2 teaspoons chili powder
  • 1/2 teaspoon salt
  • 1/2 cup Cheddar cheese, grated
  • 1 cup tortilla chips, crushed

Instructions

  1. In a skillet, combine ground beef and water. Cover and cook over low heat for 15 minutes. Break up meat with a fork.
     
  2. Stir in crushed tomatoes, kidney beans, rice, bell peppers, chili powder, and salt. Bring mixture to boil; reduce heat. Cover and simmer for 20 minutes, stirring occasionally.
     
  3. Sprinkle cheese and tortilla chips over meat mixture before serving.

This is an easy one skillet meal. Without baking required, dinner will be ready quickly. The Tex Mex flavors of this main dish will have everyone asking for seconds. For a healthier version of this recipe, I would use lean ground beef or ground turkey, and would drain the meat after cooking it, and before adding the other ingredients. I would also use reduced fat cheddar cheese.
