Sauerkraut Potato Casserole

This Sauerkraut Potato Casserole is a little taste of Germany. Sauerkraut and sausage links join potatoes and mushroom soup in this multicultural casserole. Make this easy casserole recipe to celebrate Oktoberfest at home!

  • 8 medium potatoes (to 10)
  • 1 large bag (or can) sauerkraut, drained
  • 2 cans cream of mushroom soup
  • 1 cup sour cream
  • 1 can sausage links (or veggies links)
  1. Pre-heat oven to 350 degrees F.
  2. Cook potatoes; then peel and slice medium thick. Put a layer of potatoes in the bottom of a 9 x 13-inch baking dish.
  3. Slice sausage/veggie links 1/4-inch to 1/2-inch thick and place half in a single layer over the potatoes.
  4. Mix together sauerkraut, soup, and sour cream. Spread half over the potatoes/links. Repeat with another single layer of potatoes, links, and kraut mixture.
  5. Bake until hot 30-40 minutes.

This sounds really good, and different from any recipe or casserole we have tried before. We love sauerkraut, and this is a neat way to eat it in a casserole. I might use kielbasa instead of the sausage links, and maybe substitute another type of cream soup since my husband doesn't like mushrooms. Served with a salad, this would make a great weekend comfort-food meal!

This sounds like a great recipe - I have started making sauerkraut and want some good recipes to use it in. I want the benefits of a fermented food though, so am trying to use it raw as much as possible. Will be great for using up the last of a batch though.

this is a great recipe! I cut up polish sausage or smoked sausage into thin pieces (like Eckrich or Johnsonville) and layer with thinly cut potatoes and the sauerkraut mixture. To make it easier, I microwaved the potatoes to cook them before I layered them in the casserole. You might need to cook this for an extra 15-20 min. I had extra layers and it didn't cook all the way through. You want it nice and bubbly!
