Mom's Baked Potato Salad

Hot or cold, this potato salad is delicious. The recipe serves 10, so prepare a big bowl for your next picnic!

Ingredients

  • 3/4 cup uncooked bacon diced
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 3 tablespoons flour
  • 1/3 water
  • 2/3 cup cider vinegar
  • 2/3 cup sugar
  • 1 tablespoon salt
  • 1/2 teaspoon pepper
  • 8 medium potatoes, boiled until soft, then cubed

Instructions

  1. Cook bacon in large skillet. Drain off fat and save. Measure fat and return 1/4 cup to skillet.
     
  2. Add celery and onion and cook 1 minute.
     
  3. Blend in flour. Stir in water and vinegar and cook, stirring constantly, until mixture is thick and bubbly.
     
  4. Stir in sugar, salt and pepper.
     
  5. Pour mixture over potatoes and bacon in a greased 3 quart casserole and mix lightly.
     
  6. Cover and bake in a 350 degree F oven for 30 minutes. Can be made a day ahead and refrigerated before baking.

For those who love to eat potato salad, this is a welcome change from traditional versions. What's not to like about potato salad and baked potatoes? This recipe combines both for a side dish that would be good at a barbecue or potluck dinner. When making this casserole, turkey bacon could be used, if desired.

Wouldn't be a lot easier to peel the potatoes and dice them before you boil. Eaiser to dice and will cook quicker.

Sounds delicious, but two questions. 1. What type of potatoes? 2. How should the potatoes be cooked prior to the addition of the mixture?

It just states 3 flour. Is that 3 tsp., tbsp. cups????
